4 large eggs, slightly beaten (for a softer kugel use 5 eggs) .
3/4 lb ground beef .
salt & black pepper (I use seasoned salt) .
1 onion, finely sliced .
1/4 c vegetable oil .
1-2 tbsp fresh minced garlic (or to taste) .
6 large red potatoes (peeled & coarsley grated) .
3/4 c grated parmesan cheese .
1 large onion, finely sliced (or coarsley grated) .
2 1/2 c grated cheddar cheese
Directions
Step #1 In a skillet cook the ground beef with onion & garlic until no longer pink; drain fat & return to skillet, add in salt (or seasoned salt) & black pepper to taste & continue to cook this until well browned (about 12-15 mins) set aside.
Step #2 Using the coarse end of a grater shred the potatoes, then hand-squeeze out the excess moisture in the shredded potatoes, then place this into a large bowl.
Step #3 Add the lightly beaten eggs, onion, cheddar cheese, 1/4 c vegetable oil & ground beef mixture; using clean hands mix until completely mixd (at this point you can season this with more salt & pepper if desired to suit taste).
Step #4 Transfer the mixture into a greased 13 x 9-inch baking dish then spread out with a spoon.
Step #5 Sprinkle top with grated parmesan cheese.
Step #6 Place the baking dish onto a large baking sheet (this will protect oven from any oil splatters).
Step #7 Set oven to 375 degrees (second-lowest rack).
Step #8 Cook uncovered for about 50 mins to 1 hr (for a more drier & crispy texture bake for 1 hr).
