Chocolate Banana Cake Roll Recipe

Ingredients
  • 5 egg whites
  • 1 c sweetened whipped cream
  • 3/4 c white sugar, divided
  • 2 c prepared chocolate frosting
  • 1 tsp vanilla extract
  • 5 tbsps unsweetened cocoa powder
  • 5 egg yolks
  • 1/2 c all-purpose flour
  • 2 tbsps confectioners' sugar for dusting
  • 1 tbsp baking powder
  • 2 bananas, peeled

Directions
  • Step #1 Preheat the oven to 325F degrees F (165 degrees C).
  • Step #2 Line a 10x15 inch jellyroll pan with parchment paper.
  • Step #3 Sift together the cocoa, flour & baking powder; set aside.
  • Step #4 In a medium bowl, whip the egg yolks & half of the sugar with an electric mixer until thick & pale.
  • Step #5 Set aside.
  • Step #6 In a separate larger bowl, mix the egg whites & vanilla.
  • Step #7 Whip with clean beaters until foamy.
  • Step #8 Gradually sprinkle in the remaining sugar while continuing to whip until stiff but not blocky.
  • Step #9 Fold the yolks into the whites by hand, then fold in the dry ingredients.
  • Step #10 Spread evenly in the prepared pan.
  • Step #11 Bake for 15 mins in the preheated oven, until the cake springs back when lightly pressed.
  • Step #12 Try not to let it bake too long or it will be difficult to roll.
  • Step #13 When the cake is done, run a knife around the edge to loosen & turn out onto a sheet of parchment paper or aluminum foil.
  • Step #14 Sprinkle top confectioners' sugar on both sides & allow this to cool.
  • Step #15 Spread whipped cream on one side & place the bananas along the length.
  • Step #16 Roll the cake up around the bananas.
  • Step #17 Place on a serving platter with the seam side down.
  • Step #18 Frost with chocolate frosting.
