Winter Ratatouille Recipe

Ingredients
  • 3 carrots, peeled & cubed .
  • 500 ml cold water .
  • 3 parsnips, peeled & cubed .
  • 1 tbsp balsamic vinegar .
  • 1 swede, peeled & cubed .
  • 1 onion, peeled & cut into 8 segments .
  • 15 g fresh sage .
  • 1 head garlic, unpeeled & broken into cloves .
  • 2 (395 g) cans cherry tomatoes .
  • 1 butternut squash, peeled & cubed .
  • olive oil flavored cooking spray

Directions
  • Step #1 Heat oven to 200C/Gas 6.
  • Step #2 Put the vegetables, garlic & half the sage In a large-ish deep roasting tin.
  • Step #3 Spice up & spray lightly with olive oil spray.
  • Step #4 Roast, turning every once in awhile for 30 mins, until nicely browned.
  • Step #5 Remove from oven & add the cherry tomatoes & the cold water.
  • Step #6 Cover up the dish with a baking tray or tin foil wrap.
  • Step #7 Lower the oven to 190c/gas 5 & cook for a further 1-1.
  • Step #8 5 hrs stirring every once in awhile until vegetables are very tender.
  • Step #9 Check the seasoning & stir in the the balsamic vinegar & scatter over the rest of the sage.
  • Step #10 Serve with Baked Saffron Rice.
