Potatoes And Onions And Cheese, Oh My! Recipe

Ingredients
  • 2 tbsps flour .
  • 2 c whole mushrooms .
  • 2 tomatoes, sliced (optional) .
  • 2 tbsps butter .
  • 2 tbsps butter .
  • 4-6 potatoes (depending on size) .
  • 50 g cheddar cheese, grated (See Cheese Sauce for preparation of sauce) .
  • 2 onions .
  • 200 g cheddar cheese, grated .
  • salt & pepper, to taste .
  • 400F ml milk .
  • Cheese Sauce

Directions
  • Step #1 Preheat oven to 200C/400°F.
  • Step #2 Generously butter the inside of a 9X13 baking dish & set aside.
  • Step #3 Peel the potatoes & thinly slice along with the onions & mushrooms, using a food processor/blender or mandoline.
  • Step #4 Layer half the potatoes into the bottom of the baking dish, then half of the onions, followed by half the mushrooms.
  • Step #5 Spice up with salt & pepper.
  • Step #6 Repeat layers with remaining veggies & season this with salt & pepper.
  • Step #7 Pour cheese sauce over potatoes & cover with aluminum foil wrap.
  • Step #8 Bake for 1 1/4 hrs.
  • Step #9 Remove from oven & take foil wrap off.
  • Step #10 Put a single layer of sliced tomatoes on top, if using.
  • Step #11 Sprinkle top with remaining 50g cheese & return to oven for 15 mins, turning on broiler/grill for the last 3-5 mins to brown cheese.
  • Step #12 Allow to sit 10 mins before serving.
