Apricot-stuffed Pork Chops Recipe

Ingredients
  • 1/2 tsp dry mustard .
  • salt & pepper .
  • 6 pork rib chops, 1 inch thick .
  • 2 tbsps peanut oil or light olive oil .
  • 1 (17 oz) can apricot halves .
  • 1/4 c ketchup .
  • 2 tbsps finely sliced onions

Directions
  • Step #1 Cut pocket in each chop (or have it done by the butcher), cutting from fat side almost to bone edge.
  • Step #2 Spice up cavity with a little salt & pepper.
  • Step #3 Drain apricots, reserving 1/2 c syrup.
  • Step #4 Place 2 apricot halves in pocket of each chop.
  • Step #5 Secure opening with toothpicks which have been soaked in water.
  • Step #6 Refrigerate chops until ready to cook.
  • Step #7 Chop remaining apricots; set aside.
  • Step #8 In a small saucepan, saute onions in oil over med-heat/flame until onions are translucent.
  • Step #9 Add reserved sliced apricots, apricot syrup, dry mustard, ketchup, & salt & pepper to taste.
  • Step #10 Bring to a boil then reduce heat & let simmer for about 10 mins.
  • Step #11 Grill chops over medium coals 35 mins, turning once.
  • Step #12 Brush sauce over chops while they are grilling.
  • Step #13 Serve remaining sauce with meal.
