Chocolate Banana Waffle Napoleon Recipe

Ingredients
  • 2/3 c walnuts or cashews (we prefer cashews) .
  • 8 tbsps unsalted butter, at about room temp .
  • 6 tbsps unsalted butter, melted & cooled (no substitutions) .
  • 1 1/2 tsps baking powder .
  • 1 tsp heavy cream .
  • 1 1/2 c buttermilk .
  • 2 large eggs, lightly beaten .
  • 2/3 c hazelnuts, blanched .
  • 3 c canola oil .
  • 1/2 tsp baking soda .
  • 4 ripe bananas, sliced 1/4 inch thick .
  • 2/3 c macadamia nuts .
  • vegetable oil cooking spray .
  • BROWN SUGAR BUTTER (use 2 tbsps for waffles) .
  • 2 tbsps Grand Marnier or apricot brandy or creme de banana liqueur or Creme de Cacao .
  • 2 1/2 c pure maple syrup .
  • 1 1/2 c all-purpose flour .
  • 1/2 c melted bittersweet chocolate (3 oz of Ghirardelli or Valrhona) .
  • confectioners' sugar, for dusting .
  • 1/2 c light brown sugar .
  • 1/2 tsp salt .
  • CANDIED NUTS (use 2 c for waffles) .
  • WAFFLES .
  • 2 tbsps light brown sugar

Directions
  • Step #1 BROWN-SUGAR BUTTER:.
  • Step #2 In a small bowl, mix butter & brown sugar with an electric hand mixer until light & fluffy.
  • Step #3 Add cream, & whisk until creamy & well mixd.
  • Step #4 WAFFLES:.
  • Step #5 Heat a Belgian-style waffle iron(any kind of waffle iron will do).
  • Step #6 In a medium bowl, baking soda, whisk together flour, baking powder, & salt.
  • Step #7 Stir in buttermilk, melted butter, & eggs until smooth.
  • Step #8 The batter will be thick.
  • Step #9 Spray waffle iron with cooking spray.
  • Step #10 Ladle about 1/4 c batter into each section of the waffle grid; spread batter almost to the edges.
  • Step #11 Close lid; bake 3 mins, until no steam emerges from waffle iron.
  • Step #12 Transfer cooked waffles to a baking sheet; place this in an oven set to low heat, about 200°, while using the remaining batter.
  • Step #13 Meanwhile, In a large-ish skillet over med-heat/flame, melt 2 tbsps brown-sugar butter.
  • Step #14 Add bananas, & sauté until softened & golden brown, 1 to 1 1/2 mins.
  • Step #15 Add nuts.
  • Step #16 Remove skillet from heat, carefully add Grand Marnier or any of the other choices, & ignite.
  • Step #17 (optional but worth the effort).
  • Step #18 Allow alcohol to burn off.
  • Step #19 Continue to sauté until bananas & nuts are well coated.
  • Step #20 Split waffles in half.
  • Step #21 Place a half on each of two plates.
  • Step #22 Spoon one-quarter of the banana mixture over each waffle half.
  • Step #23 Top with remaining waffle halves.
  • Step #24 Spoon another one-quarter of the banana mixture over waffles.
  • Step #25 Dust each with confectioners’ sugar & then drizzle with chocolate.
  • Step #26 CANDIED NUTS: (Make first).
  • Step #27 Combine nuts & maple syrup in small saucepan.
  • Step #28 Bring to a boil over medium-high heat, & continue to cook this until syrup begins to coat nuts, about 30 mins.
  • Step #29 In a medium saucepan, heat canola oil to 350°F.
  • Step #30 Strain nuts to remove any excess syrup.
  • Step #31 Transfer to a baking sheet to cool.
  • Step #32 Fry nuts until crispy & any excess caramel is removed.
  • Step #33 Remove to a baking sheet lined with a Silpat baking mat or parchment paper.
  • Step #34 Let cool.
