Homemade Ricotta Recipe

Ingredients
  • 3 tbsps fresh lemon juice or vinegar .
  • 1 c cream .
  • 1/2 tsp salt .
  • 2 pints 1% low-fat milk .
  • 1 cheesecloth, to line sieve

Directions
  • Step #1 Line sieve with cheesecloth & place this In a large-ish bowl.
  • Step #2 Set aside.
  • Step #3 Bring milk, cream & salt to a boil over med-heat/flame stirring often to prevent scorching.
  • Step #4 When mixture boils, add lemon juice/vinegar & reduce heat to low.
  • Step #5 Stir constantly for 2 mins until mixture curdles.
  • Step #6 When curdled, remove this from heat & pour this into prepared sieve.
  • Step #7 Allow to drain for 45 to 60 mins.
  • Step #8 For creamier texture drain for 45 mins, or add desired amount of drained liquid & stir.
  • Step #9 Will keep put in the fridged for 2 days.
  • Step #10 Yields 2 c.
