Sweet Potato And Dolcelatte Fritters Recipe

Ingredients
  • 100 g fresh breadcrumbs .
  • 50 g butter .
  • 450 g potatoes, sliced .
  • 15 g torn basil leaves .
  • 1 egg, beaten .
  • 225 g dolcelatte, cubed .
  • oil (for deep frying) .
  • 450 g sweet potatoes, sliced

Directions
  • Step #1 Place all the potatoes In a large-ish pan & boil for 10 mins until tender.
  • Step #2 Drain & mash with the butter, set aside to cool.
  • Step #3 Once cool stir in the the basil.
  • Step #4 Use you hands to flatten the potato mix into a 2 inch disc.
  • Step #5 Place a cube of cheese in the middle & mould the mix around the cheese.
  • Step #6 repeat until all the mixture is gone.
  • Step #7 Place egg & breadcrumbs in separate bowls.
  • Step #8 Dip each fritter in egg then roll in the breadcrumbs.
  • Step #9 Chill until ready to cook (can be frozen at this point).
  • Step #10 Heat the oil & deep fry the fritters in batches until golden brown.
