Step #2 On medium low heat, sweat onion, garlic, & potatoes.
Step #3 Spice up with white pepper & salt.
Step #4 Potatoes will begin to form a slurry from their starch.
Step #5 This is normal.
Step #6 Continue to sweat until potatoes begin to soften, adding liquid if necessary (beer, broth, white wine,etc).
Step #7 When potatoes have softened, add milk,cream & nutmeg & bring to slow simmer.
Step #8 From this point on, do not allow to boil.
Step #9 Only allow a slow simmer.
Step #10 After returning to simmer, slowly add grated cheese & melt into mixture.
Step #11 Add bratwurst, return to simmer, & let simmer 30 mins.
Step #12 Salt & pepper to taste.
Step #13 If soup is too thin, or if soup has accidentally come to a boil & broken make a slurry made of 3 parts milk or water to 1 part flour & add a little at a time to the simmering soup allowing it to thicken before adding more.
Step #14 Stir in parsley.
Step #15 Serve with your favorite salad and/or fresh garlic toast.
