Lamb Chops With Red Wine And Rosemary Sauce Recipe

Ingredients
  • 8 lamb chops, fat trimmed .
  • 1 c dry red wine .
  • 1 tsp flour .
  • 1 tsp fresh rosemary, minced .
  • salt & fresh ground pepper .
  • 1 tbsp fresh parsley, sliced .
  • 3 tbsps heavy cream .
  • 1/2 tsp garlic powder .
  • 1 large shallot, finely sliced .
  • 1 c chicken broth or chicken stock .
  • 1 tsp butter .
  • 2 tsps Dijon mustard .
  • 2 tbsps olive oil .
  • 2 garlic cloves, minced

Directions
  • Step #1 Heat a large skillet over medium-high heat.
  • Step #2 Spice up lamb chops with salt,pepper & garlic powder.
  • Step #3 Add the oil to the skillet.
  • Step #4 Add chops to the pan cook 4 mins.
  • Step #5 Turn chops over & cook 3 mins longer.
  • Step #6 Remove chops from the skillet & set aside in a warm place.
  • Step #7 Pour off all but 2 tsp of fat from skillet.
  • Step #8 Add the garlic & shallot.
  • Step #9 Cook until they become transparent & tender.
  • Step #10 Add the wine,rosemary,and parsley, stirring up browned bits from the bottom of the pan.
  • Step #11 Simmer over high heat until syrupy.
  • Step #12 That will take about 3 mins.
  • Step #13 Add the chicken broth & continue to simmer until sauce is reduced by about half.
  • Step #14 Combine butter & flour in a c.
  • Step #15 (beurre manie).
  • Step #16 Stir mustard & cream into sauce.
  • Step #17 Adjust seasonings.
  • Step #18 Bring to a boil.
  • Step #19 Add beurre manie to sauce & stir well until incorporated into sauce & sauce thickens, about 2 mins.
  • Step #20 Remove sauce from heat.
  • Step #21 Plate chops, 2 per plate, & add sauce over top.
  • Step #22 Garnish with a sprig of rosemary.
  • Step #23 Serve Immediately.
