Pistachio Lemon Chicken Recipe

Ingredients
  • 1/4 c pistachios, sliced .
  • 1 tsp lemon pepper .
  • 4 boneless skinless chicken breast halves .
  • lemon slices (optional) .
  • 1 tsp lemon peel .
  • 3 tbsps lemon juice .
  • 1 tbsp vegetable oil

Directions
  • Step #1 In an ungreased heavy skillet over medium-low heat, stirring frequently until beginning to brown, toast pistachios 5-7 mins, then stirring constantly until golden brown.
  • Step #2 Flatten each chicken breast half to 1/4-inch thickness.
  • Step #3 Sprinkle top both sides of chicken with lemon pepper seasoning.
  • Step #4 Heat oil in a 12-inch skillet over medium-high heat.
  • Step #5 Cook chicken, lemon juice & lemon peel in oil 10-15 mins, turning chicken once & stirring juices every once in awhile, until chicken is cooked through.
  • Step #6 Serve chicken topped with pan juices, nuts & garnish with lemon slices.
