Hungarian Dumplings Recipe

Ingredients
  • 1/4 tsp baking powder .
  • 2 eggs .
  • 2 tbsps freshly rendered lard or oil .
  • 4 quarts water .
  • 2 1/2 c all-purpose flour .
  • 2 1/2 tsps salt .
  • 1/2 c milk .
  • 1/2 c water

Directions
  • Step #1 Using an electric mixer, lard or oil, water, mix the eggs, & milk.
  • Step #2 Stir the flour together with 1/2 t of the salt & the baking powder in a dry bowl.
  • Step #3 Blend this mixture into the liquid.
  • Step #4 Mix well & set aside for a moment.
  • Step #5 Bring 4 quarts of water to a boil & add 2 tsps of salt.
  • Step #6 Using a Spaetzle maker or Spaetzle press, squeeze the dough into the boiling water.
  • Step #7 Use about 1/3 of the dough for each batch.
  • Step #8 When the dumplings float to the surface, they are done.
  • Step #9 Remove them with a slotted spoon & place this in a colander.
  • Step #10 They can be served this way with Paprika Gravy or pan-fried with a little butter, just until they are a bit golden, & topped with parsley.
  • Step #11 NOTE: These dumplings can also be made by using a piping bag or dropping very small amounts from a spoon.
  • Step #12 The latter takes much much longer.
