Tomato Risotto Recipe

Ingredients
  • 1/4 tsp ground black pepper .
  • 5 green onions, cut into 1/2-inch lengths (about 1 c) .
  • 14 1/2 oz chicken broth .
  • 1/4 tsp salt .
  • 14 1/2 oz sliced tomatoes with green pepper celery & onion, undrained .
  • 3 tbsps butter .
  • 3/4 c parmesan cheese, grated .
  • 1 1/2 c arborio rice or medium-grain white rice, uncooked

Directions
  • Step #1 In a large skillet over med-heat/flame, melt butter.
  • Step #2 Add onions, cook & stir for one min than add rice.
  • Step #3 Stir frequently & cook for 2 mins.
  • Step #4 Add broth & undrained tomatoes, bring to a boil.
  • Step #5 Cover up & reduce heat to low; simmer for 20 mins stirring every once in awhile.
  • Step #6 Uncover skillet & let simmer an extra 5 mins, stir every once in awhile.
  • Step #7 Remove from heat, salt, stir in the cheese, & pepper.
  • Step #8 Serve as soon as possible.
