Chutney Chicken Curry Recipe

Ingredients
  • 3/4 lb boneless skinless chicken breasts, cut into 1-inch pieces .
  • 1 (14 1/2 oz) can crushed tomatoes, undrained, fire roasted if you can find them .
  • 2 tbsps honey .
  • 2 tsps curry powder .
  • 3 c hot cooked rice (without salt or fat) .
  • 1 c sliced onions .
  • 1/3 c mango chutney .
  • 2 tsps margarine or butter .
  • 3 tbsps white wine vinegar

Directions
  • Step #1 Heat margarine In a large-ish skillet over med.
  • Step #2 high heat until melted.
  • Step #3 Add onion & cook 3 mins or until tender, stirring often.
  • Step #4 Stir in curry powder; cooke stirring constantly for 1 min.
  • Step #5 Stir in tomato, chutney, vinegar & honey; bring to a boil.
  • Step #6 Reduce heat & let simmer for 5 mins.
  • Step #7 Stir in chicken.
  • Step #8 Bring to a boil, reduce heat & let simmer 8-10 mins or until chicken is done.
  • Step #9 Serve over rice.
