Sandy's Seafood Casserole Recipe

Ingredients
  • 1 (3 oz) package zatarain's crab boil .
  • 1/2 c water chestnuts, drained & sliced .
  • 1 c cheddar cheese, shredded .
  • 1/2 tsp paprika .
  • 2 c cooked rice .
  • 1 c mayonnaise .
  • 1/2 c butter .
  • 1 (7 oz) can crabmeat, drained .
  • 3 lbs shrimp, peeled & de-veined .
  • 1/2 c slivered almonds .
  • 2 tsps creole seasoning (Tony's) .
  • 1 c green bell peppers, sliced .
  • 1 c V8 vegetable juice .
  • 1 c onions, sliced .
  • 1 c celery, sliced

Directions
  • Step #1 Bring crab boil to a boil for 5 mins; add shrimp & boil for 5-10 mins until shrimp is pink.
  • Step #2 Remove from heat & drain.
  • Step #3 In a large skillet, saute the onions, pepper & celery in the 1/2 c butter.
  • Step #4 In a large bowl, rice, combing the sauteed vegetables, water chestnuts, mayonaise & seasoning.
  • Step #5 Stir in V-8 juice, add crab meat & shrimp & mix well.
  • Step #6 Pour into a large casserole dish.
  • Step #7 Top with shredded cheese & almonds.
  • Step #8 Bake at 350 degrees for 30 mins.
