Shrimp Jambalaya Recipe

Ingredients
  • 1 garlic clove, finely sliced .
  • 1 c celery, finely sliced .
  • 1 1/2 c sliced onions .
  • 2 lbs peeled & deveined large shrimp .
  • 1 tbsp flour .
  • 1/2 bell pepper, sliced .
  • 3 tbsps oil .
  • 1/8 tsp cayenne pepper .
  • 1/4 c sliced fresh parsley .
  • 1/2 c onion tops, finely sliced .
  • 1 (6 oz) can tomato sauce .
  • 2 c raw rice .
  • 1/4 tsp salt .
  • 3 c water .
  • 1 (14 oz) can stewed tomatoes

Directions
  • Step #1 Make a roux with Flour & Oil.
  • Step #2 Cook until about the color of peanut butter.
  • Step #3 Add onions, celery, bell pepper & garlic.
  • Step #4 Cook slowly until transparent, stiring often.
  • Step #5 Add stewed tomatoes & tomato sauce & let cook this until oil rises to the top.
  • Step #6 Stir in raw rice & raw shrip, add 3 c of water.
  • Step #7 Cook covered over very low heat until rice is tender about 20 or 30 mins.
  • Step #8 Add more oil or water if mixture appears to be too dry.
  • Step #9 At the very end when cooked, stir in the parsley & onion tops.
  • Step #10 Prep time is time to chop veggies.
  • Step #11 Cook time is total time for making roux & then time for rice to cook.
