Parmesan-breaded Lamb Chops Recipe

Ingredients
  • lemon wedges, to serve .
  • 2 lamb racks, trimmed, about 1 1/4 lbs. total weight .
  • 2 oz fresh breadcrumbs .
  • 2 oz parmesan cheese, freshly grated .
  • salt, to taste .
  • parmesan cheese, shavings, to garnish .
  • 3 oz flour .
  • 2 eggs, beaten .
  • parsley sprigs, to garnish .
  • 1 tbsp sesame seeds .
  • pepper, to taste

Directions
  • Step #1 Spice up the flour with the sesame seeds, salt & pepper.
  • Step #2 Dip the lamb into the seasoned flour, coating it evenly all over.
  • Step #3 Mix together the Parmesan cheese & the bread crumbs & season this with salt & pepper.
  • Step #4 Preheat the oven to 400F degrees F.
  • Step #5 Dip the the lamb first in the beaten egg & then in the Parmesan crumb mixture & coat all over, pressing the crumbs into the lamb.
  • Step #6 Roast the lamb for about 20 mins (or until done to your taste).
  • Step #7 Cut the lamb into 4 pairs of cutlets & serve this with the lemon wedges.
  • Step #8 Garnish with the parsley & shavings of Parmesan.
