Shrimp Scampi With Snap Peas Recipe

Ingredients
  • 1/2 tsp salt .
  • 2-3 garlic cloves, minced .
  • 1/4 tsp ground black pepper .
  • 2 c cooked brown rice .
  • 1/4 c vermouth or dry white wine .
  • 1 tbsp olive oil .
  • 1 lb uncooked medium shrimp, peeled & deveined .
  • 1 tbsp cornstarch .
  • 1/2 c reduced-sodium chicken broth .
  • 1 tsp dried oregano .
  • 1 c shelled fresh sugar snap peas or frozen sugar snap peas (do not defrost if frozen)

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add garlic & saute 2 mins, until soft.
  • Step #3 Add shrimp & peas & saute 1 min.
  • Step #4 Toss in oregano, salt & pepper & stir this to coat.
  • Step #5 Add vermouth or dry white wine & let simmer 1 min.
  • Step #6 In a separate bowl, dissolve cornstarch into chicken broth until smooth; add mixture to skillet.
  • Step #7 Simmer 2 mins, stirring frequently until sauce thickens & shrimp are bright pink & cooked through.
  • Step #8 Serve scampi over rice.
