Lemon-garlic Prawns W/ Parmigiano-reggiano Cream Sauce Recipe

Ingredients
  • 1/4 c fresh lemon juice .
  • fresh ground white pepper .
  • 2 c heavy cream .
  • Prawns & Beans .
  • 1 lb French haricots vert or green beans, blanched .
  • 16 prawns, shelled & deveined or 16 large shrimp, shelled & deveined .
  • 1 tsp finely minced lemon zest .
  • 2 c dry white wine .
  • 2/3 c grated parmigiano-reggiano cheese .
  • fresh ground black pepper .
  • 2 c chicken stock .
  • 2 shallots, minced .
  • Marinade .
  • 1/4 c extra virgin olive oil .
  • salt .

  • Parmigiano-Reggiano Cream Sauce .
  • 3 garlic cloves, minced

Directions
  • Step #1 Place the prawns in a shallow dish.
  • Step #2 Combine the olive oil, lemon juice, lemon zest & garlic.
  • Step #3 Mix well & pour over the prawns.
  • Step #4 Marinate in the refrigerator for at least 1 hr or up to overnight.
  • Step #5 In a large sauté pan over med-heat/flame, heat 2 Tbsp of the marinade.
  • Step #6 Using a slotted spoon, transfer the shrimp to the pan & sauté for 4 to 5 mins or until prawns are pink.
  • Step #7 Spice up with salt & pepper.
  • Step #8 Add the haricots verts & toss to heat.
  • Step #9 Turn out onto a warmed serving platter & serve this with Parmigiano-Reggiano Cream Sauce on the side.
  • Step #10 To make the sauce: In a large saucepan, mix the wine & shallots.
  • Step #11 Cook over high heat until most of the liquid has evaporated.
  • Step #12 Add the chicken stock & cook over high heat until reduced by half.
  • Step #13 Add the cream & cook this until hot.
  • Step #14 Stir in the Parmigiano-Reggiano.
  • Step #15 Spice up with salt & pepper.
