3 tbsps mr. pepper seasoning, we used 1 T. black pepper, 1 T. white pepper & 1 T. cayenne pepper in place of Mr. Pepper seasonin .
your favorite barbecue sauce, we used Ah-So Chinese Style Sauce .
6 tbsps garlic powder, we used Lawry's garlic powder with parsley, as it intensifies the flavor .
2 tbsps liquid smoke, we omitted this (optional) .
6 tbsps brown sugar .
9 tbsps Dijon mustard or yellow mustard, we used Dijon .
3 pork rib racks, 9 lbs. or 4 racks of baby-back pork ribs, 8 lbs .
1 1/2 tsps salt .
6 tbsps paprika
Directions
Step #1 Adjust oven rack to upper-middle position, & preheat your trusty oven to 250.
Step #2 Mix sugar, paprika, pepper, garlic powder & salt in a small bowl.
Step #3 If using liquid smoke, mix mustard & liquid smoke in a small bowl.
Step #4 Brush both sides of each slab with mustard, then sprinkle both sides with the dry rub.
Step #5 If using just mustard, brush directly on each slab, then sprinkle both sides with the dry rub.
Step #6 ***Line a lg.
Step #7 jelly roll pan or other shallow roasting pan with a sheet of heavy-duty aluminum foil wrap.
Step #8 Place the pan on the oven floor (if oven is gas), or bottom oven rack (if oven is electric), making sure the foil wrap covers the entire oven level.
Step #9 Roast ribs until fork-tender- 2-3 hrs for spare ribs, & 1 1/2-2 hrs for baby-back ribs.
Step #10 Remove foil wrap-lined pan from oven, & pour off fat.
Step #11 Transfer ribs to foil wrap-lined pan, meat side down.
Step #12 Turn on broiler.
Step #13 Brush ribs with 1/2 the Ah-So Chinese Style Sauce.
Step #14 Put pan under broiler until glaze bubbles vigorously.
Step #15 Remove pan, turn the ribs, brush with the remaining sauce, & return to the.

Step #17 Be careful, because they can burn.
Step #18 Let stand 5-10 mins.
Step #19 Cut into individual servings, & serve.
Step #20 ***Note: My Aunt Ann makes these directly on the racks in her self-cleaning oven, & just put aluminum foil wrap on the bottom rack to catch everything.
Step #21 Once the ribs are made she just soaks the racks to clean, & turns on the automatic cleaning system for her oven.
