Pecan-cranberry Tart Recipe

Ingredients
  • 1/2 c old fashioned oats .
  • 1 pinch salt .
  • 2 tbsps canola oil .
  • 1/4 tsp salt .
  • 1/2 c fat free egg substitute .
  • 1/2 c all-purpose flour .
  • 2/3 c packed dark brown sugar .
  • 1/3 c light corn syrup .
  • 1 tbsp butter, melted .
  • 1 1/2 tbsps cider vinegar .
  • Filling .
  • 2 tsps vanilla extract .
  • 3/4 tsp baking powder .
  • 2 large egg whites .
  • Crust .
  • 3 tbsps water .
  • 2 tbsps granulated sugar .
  • 1/3 c coarsely sliced dried cranberries .
  • 1 c pecan halves, divided

Directions
  • Step #1 Preheat oven to 375 degrees F.
  • Step #2 Lightly oil a 9-inch tart pan with a removable bottom or coat it with nonstick spray.
  • Step #3 To make crust: Spread oats in another pie pan & bake, stirring every once in awhile, until toasted, 6 to 12 mins.
  • Step #4 Let cool.
  • Step #5 Place the oats in a food processor/blender & process until coarsely ground.
  • Step #6 Stir together oats, sugar, flour, baking powder & salt In a large-ish bowl.
  • Step #7 Drizzle oil onto dry ingredients & use a fork or your fingers to mix until crumbly.
  • Step #8 Using a fork, 1 tbsps at a time, stir in the water, until dough just comes together.
  • Step #9 Turn the dough out onto a floured surface & knead 7 to 8 times.
  • Step #10 Roll dough out to an 11-inch circle, dusting with flour if necessary.
  • Step #11 Transfer dough to prepared pan, pressing to fit.
  • Step #12 Trim edges.
  • Step #13 (If necessary, use scraps to patch any holes in crust.
  • Step #14 ).
  • Step #15 To make filling & bake: Spread 1/2 c pecans on a baking sheet & bake for 5 to 10 mins, or until fragrant.
  • Step #16 Let cool & coarsely chop.
  • Step #17 Whisk brown sugar, egg whites, butter, corn syrup, vinegar, eggs, vanilla & salt in a medium bowl until smooth.
  • Step #18 Stir in dried cranberries & sliced pecans.
  • Step #19 Spoon filling into crust.
  • Step #20 Arrange remaining 1/2 c pecans on top of filling.
  • Step #21 Bake tart for 20 to 25 mins, or until filling is set & crust is golden.
  • Step #22 Cool completely in the pan on a wire rack.
