Al Roker's Spicy Beef Chili Recipe

Ingredients
  • 1 c water .
  • fresh ground pepper .
  • 1 tbsp sweet paprika .
  • 2 tsps ground cumin .
  • 2 tbsps vegetable oil .
  • 6 garlic cloves, minced .
  • 1 lb hot Italian sausages, casings removed & meat broken into 1-inch pieces .
  • 1 (28 oz) can sliced tomatoes .
  • 1 large white onion, sliced .
  • 1 (15 oz) can cannellini beans, drained .
  • 2 lbs chuck steaks, cut into 1/2-inch dice .
  • 1 (15 oz) can kidney beans, drained .
  • kosher salt .
  • 1 tbsp chili powder .
  • 1 (15 oz) can pinto beans, drained

Directions
  • Step #1 In a large enameled cast-iron casserole or soup pot, heat the oil.
  • Step #2 Spice up the chuck with salt & pepper.
  • Step #3 Add half of the chuck & cook over moderately high heat until browned, about 5 mins.
  • Step #4 Using a slotted spoon, transfer the meat to a plate.
  • Step #5 Repeat with the remaining chuck.
  • Step #6 Add the sausage & cook this until browned, breaking it up with a spoon, about 4 mins.
  • Step #7 Add the sausage to the sliced chuck.
  • Step #8 Add the sliced onion to the casserole & cook over moderate heat until tender, about 4 mins.
  • Step #9 Add the garlic & cook for 2 mins.
  • Step #10 Stir in the chili powder, cumin & the chuck, paprika, sausage & any accumulated juices.
  • Step #11 Cook, stirring until fragrant, about 1 min.
  • Step #12 Add the tomatoes & their juices & the water.
  • Step #13 Cover up & let simmer over moderately low heat for 1 hr.
  • Step #14 Stir in the beans & let simmer uncovered until thickened, about 15 mins.
  • Step #15 Spice up with salt if desired.
  • Step #16 Serve the chili in deep bowls, passing the cheese, scallions, sour cream & cilantro on the side.
