Sea Islands Grouper Recipe

Ingredients
  • 2 tbsps honey .
  • 2 tbsps lime juice .
  • 1/4 c olive oil .
  • 1/4 c bourbon .
  • 1/8 tsp black pepper .
  • 1/8 tsp sea salt .
  • 24 oz grouper fillet .
  • 1 c pecan halves, crushed

Directions
  • Step #1 Stir together bourbon, oil, salt, pepper, lime juice & honey until emulsified.
  • Step #2 Pour into shallow dish.
  • Step #3 Lay grouper filets in bourbon mixture.
  • Step #4 Turn to coat & put in the fridge for 1-4 hrs.
  • Step #5 Pour crushed pecans into another shallow dish.
  • Step #6 Pour enough olive oil into deep frying pan to cover bottom & preheat on medium-low.
  • Step #7 Dip filets into pecans, pressing firmly to coat evenly.
  • Step #8 Turn over & coat other side.
  • Step #9 Fry in pan until pecans turn golden brown.
  • Step #10 Gently turn over & cook other side; approximately 10 mins per side.
  • Step #11 Can also use with other firm-fleshed fish or chicken.
