Cyprus - Caramel Pudding - Poutigka (pronounced Boutinga) Recipe

Ingredients
  • 5 eggs .
  • 2 tbsps lemon juice .
  • 3 tbsps water .
  • 1 glass almonds, blanched & sliced into small pieces, this can be (optional) .
  • 1 glass milk (i myself may try using Cool Whip) .
  • 1/3 glass almonds, blanched, roasted & sliced into small pieces, again (optional) .
  • 4 (397 g) cans boiling water (use milk can) .
  • 6 tbsps cornflour .
  • Second Cream .
  • First Cream .
  • 1 (397 g) can sweetened condensed milk .
  • 1 (397 g) can sweetened condensed milk .
  • 2 c sugar .
  • 3 c white dinner rolls, finely cubed .
  • For the Caramel .
  • 3 eggs .
  • 1 tsp vanilla extract .
  • For the topping .
  • 1 Dream Whip, beaten with .
  • 1 tsp vanilla extract .
  • 4 (397 g) cans water (use can as a measure)

Directions
  • Step #1 To prepare the caramel, place the sugar, the water & the lemon juice in a saucepan & place over low heat/flame.
  • Step #2 Bring to a boil, stirring constantly until the mixture turns into a rich golden caramel colour.
  • Step #3 Pour the caramel into a 27x39 cm oval oven proof dish & spread with a spoon to cover it's base & the sides.
  • Step #4 To prepare the first cream, beat the eggs & while beating pour in the milk, then slowly stir in the the water & add the vanilla.
  • Step #5 Fold in the bread cubes & almonds if using.
  • Step #6 Pour over the caramel.
  • Step #7 Place the dish over a roasting tin of boiling water & bake in a preheated, moderate oven (160 degrees Celsius) for about 1 hr or until a knife inserted into the centre comes out clean.
  • Step #8 Remove from the oven & allow this to cool for 1 1/2 - 1 1/2 hrs.
  • Step #9 Prepare the second cream as follows: pour the milk into a pan.
  • Step #10 Stir in the cornflour dissolved in some of the water, the remaining water, the vanilla & the well-beaten eggs.
  • Step #11 Pour this cream over the first one & allow this to cool.
  • Step #12 Spread the Dream Topping/cool Chip on top.
  • Step #13 Sprinkle top with the roasted almonds if using.
  • Step #14 Notes: 1.
  • Step #15 Place 1 - 2 slices of lemon in the roasting tin with the boiling water so as to prevent it from tarnishing.
  • Step #16 2.
  • Step #17 When you pour over the second cream do not worry if the first one has partly moved away from it surrounds.
