Clare's Whole Wheat Potato Bread Recipe

Ingredients
  • 2 1/2 c whole wheat flour
  • 1 1/2 c instant mashed potato flakes
  • 1/4 c honey
  • 2 eggs, beaten
  • 1 1/2 c warm water
  • 2 c all-purpose flour
  • 1/4 c margarine
  • 2 1/2 tsps salt
  • 1 1/4 c warm milk
  • 2 (.25 oz) packages active dry yeast

Directions
  • Step #1 In a large bowl, salt, potato flakes, mix the all-purpose flour, & yeast.
  • Step #2 In a separate bowl, honey, mix the water, milk, margarine, & eggs.
  • Step #3 Beat the liquid mixture into the dry ingredients.
  • Step #4 Gradually mix in whole wheat flour until evenly moist.
  • Step #5 Knead 5 mins.
  • Step #6 Place in a greased bowl, & allow to rise until doubled in size, cover with a clean kitchen towel, about 1 hr.
  • Step #7 Grease two 5x9 inch loaf pans.
  • Step #8 Punch down dough, shape into loaves, & place this in the pans.
  • Step #9 Allow to rise in pans 1 hr.
  • Step #10 Preheat oven to 375 degrees F (190 degrees C).
  • Step #11 Bake loaves 35 mins, until lightly browned & hollow sounding when tapped.
