Italian Chicken Vegetable Soup Recipe

Ingredients
  • 4 oz small shell pasta (optional) or tortellini (optional) .
  • 28 oz Italian-style sliced tomatoes .
  • 1-2 small zucchini, sliced in small pieces .
  • 2 tsps Italian spices .
  • 30 oz chicken broth .
  • 1-2 garlic clove .
  • 1 leftover chicken carcass, with meat .
  • 1 c frozen spinach (defrosted) .
  • parmesan cheese .
  • pepper .
  • 2 carrots, sliced in coins .
  • 2 bay leaves .
  • salt .
  • 1 medium onion, sliced .
  • water, to cover

Directions
  • Step #1 Cover up chicken in large soup pot with water & bring to boil.
  • Step #2 Add sliced onion, garlic & carrots.
  • Step #3 Simmer on low till vegetables are tender & meat is hot.
  • Step #4 Strain the chicken meat from the pot & dice chicken in small pieces.
  • Step #5 Skim for any bones or fat.
  • Step #6 Return cut up chicken to the pot.
  • Step #7 Add the tomatoes, zucchini, spinach & seasonings.
  • Step #8 Simmer for at least 40 mins more on low till all the flavors mix.
  • Step #9 May add small shell pasta or tortellini as desired in the end till tender.
  • Step #10 *But this raises the calories if you're counting.
  • Step #11 May garnish with parmesan cheese.
  • Step #12 Serve with Crusty Italian bread & a salad.
