Lentil Burritos Recipe

Ingredients
  • 1 (6 oz) can tomato paste .
  • 5-8 large tortillas .
  • 1 c dried lentils (green or brown) .
  • 4 c water .
  • 1 1/2 c cooked white rice or cooked brown rice .
  • 1 (1 1/4 oz) package taco seasoning mix (I use Hot 'n Spicy) .
  • sour cream, for serving .
  • 6 oz cheddar cheese or monterey jack cheese, sliced thinly (use whatever you have on hand) .
  • cheddar cheese, grated, optional topping

Directions
  • Step #1 Put the water In a large-ish pot.
  • Step #2 Bring to a boil.
  • Step #3 Stir in the lentils & cover.
  • Step #4 Lower the heat & let simmer for 40 mins.
  • Step #5 Dump the lentils (and any remaining water) into a large bowl.
  • Step #6 Add the cooked rice, tomato paste, taco seasoning mix.
  • Step #7 Stir well.
  • Step #8 Lightly grease a large casserole dish.
  • Step #9 (I use a 9" x 13" cake pan.
  • Step #10 ).
  • Step #11 Preheat your oven to 350°.
  • Step #12 On the counter (or other work space) lay out a tortilla.
  • Step #13 Put a line of the filling just below the horizontal center.
  • Step #14 I probably add about 1/2 a c of filling to each burrito.
  • Step #15 Make sure that there is about an inch or so at either end of the line that doesn't have filling on it.
  • Step #16 Place a couple of slices of cheese on top of the line of filling.
  • Step #17 I have also placed some sliced & pan fried chicken breast on top at this point as well.
  • Step #18 Makes my Fiance happy when he can see meat in a meal.
  • Step #19 Fold up the bottom of the tortilla to cover the filling (or partially cover).
  • Step #20 Then fold over both sides.
  • Step #21 Then continue rolling to the top.
  • Step #22 The burrito should be about 1 1/2" wide & about 4" long.
  • Step #23 Place seam side down in the prepared pan.
  • Step #24 Continue with the rest of the wraps.
  • Step #25 At this point, you can either put them in the oven as is, or you can top them with some grated cheese.
  • Step #26 I think about 1/2 a c of grated cheese would be more than sufficient.
  • Step #27 I don't usually top mine with the cheese.
  • Step #28 Place in the oven.
  • Step #29 Cook for about 20-30 mins.
  • Step #30 It depends on whether or not you used cheese.
  • Step #31 The tops don't usually get too brown for me.
  • Step #32 They just get a lovely crustiness to them.
  • Step #33 You could rub some butter on top before cooking if you wanted them to brown a bit more.
  • Step #34 Let stand for a few mins before serving.
  • Step #35 First time I made this, I only made 5 & I had about a c of leftover filling.
  • Step #36 We ate the leftover filling as Sloppy Joe's on a nice crusty roll.
  • Step #37 I enjoyed it heated up on it's own.
