Chocolate-cherry Banana Bread (diabetic Friendly) Recipe

Ingredients
  • 2 tsps cooking oil .
  • 1/4 c sliced walnuts .
  • 1/4 tsp baking soda .
  • 8 maraschino cherries, drained & sliced .
  • 1/4 c Egg Beaters egg substitute (or 1 egg, beaten) .
  • 2/3 c Splenda sugar substitute, baking mix .
  • 2 tsps baking powder .
  • 1/4 c nonfat milk .
  • 1/4 c fat free sour cream .
  • 2 tbsps miniature semisweet chocolate chips .
  • 1 1/2 c all-purpose flour .
  • 1 tsp vanilla .
  • 2/3 c mashed bananas (about 2 medium bananas)

Directions
  • Step #1 Preheat oven to 350 degree F.
  • Step #2 Lightly coat the bottom & 1/2 inch up sides of a 9x5x3-inch loaf pan with nonstick cooking spray; set aside.
  • Step #3 In a large bowl, stir this together all-purpose flour, sugar, baking powder, & baking soda.
  • Step #4 Make a well in center of flour mixture; set aside.
  • Step #5 In a medium bowl, milk, egg, mix sour cream, & oil.
  • Step #6 Stir in mashed banana & vanilla.
  • Step #7 Add sour cream mixture all at once to flour mixture; stir just until moistened (batter should be lumpy).
  • Step #8 Fold in sliced cherries, walnuts, & chocolate chips.
  • Step #9 Spoon batter into prepared pan.
  • Step #10 Bake for 35 to 40 mins or until a toothpick inserted near the center comes out clean.
  • Step #11 Cool in pan on a wire rack for 10 mins.
  • Step #12 Remove bread from pan.
  • Step #13 Cool completely on wire rack.
  • Step #14 Makes 16 slices.
