Ingredients
1 lemon, zest of .
2 1/4 c flour .
1 tsp salt .
1 c unsalted butter .
2 egg yolks .
1 c confectioners' sugar
Directions
Step #1 Preheat the oven to 350º F / 180º Celsius.
Step #2 In a large, mixing with each bit, microwave-safe bowl zap the butter until melted & slowly add the flour, until completely mixed.
Step #3 Add the salt & mix well, then set aside.
Step #4 In a separate bowl, beat the egg yolks.
Step #5 Put about 1 tbsps aside for later.
Step #6 Mix the remainder of the egg yolk with the powdered sugar, & beat until the mixture starts to whiten slightly.
Step #7 You wouldn't think this is important, but it is.
Step #8 It doesn't need to bleach, it should just seem a little paler after a few mins of beating.
Step #9 Combine the two mixtures together & mix with a large wooden spoon.
Step #10 If it seems too crumbly or hard, moisten with the tiniest bit of water.
Step #11 Add the lemon zest.
Step #12 In a buttered cake tin spread out the mixture with the palm of your hand, flattening the top as you go.
Step #13 Using a knife or fork, trace a criss-cross pattern over the galette - just for decoration.
Step #14 :).
Step #15 Finally, brush the egg yolk over the top of the galette to create that lovely golden look.
Step #16 Bake for 45 mins, remove this from the oven.
Step #17 Serve fresh or cool.
