Cajun Kabobs Recipe

Ingredients
  • 4 kabob skewers .
  • nonstick cooking spray .
  • 1/4 tsp cayenne pepper .
  • 1 medium yellow squash .
  • 1 medium zucchini .
  • 2 tsps paprika .
  • 1/2 tsp oregano .
  • 1/2 tsp thyme .
  • 1/2 tsp salt .
  • 3/4 lb boneless skinless chicken breasts .
  • salt & pepper .
  • 2 garlic cloves, crushed .
  • 1 tsp olive oil .
  • 1/4 tsp ground pepper

Directions
  • Step #1 Preheat broiler.
  • Step #2 Line baking tray with foil wrap & spray with cooking spray.
  • Step #3 Place rack about 5-inches from heat.
  • Step #4 Mix garlic, thyme, paprika, oregano, cayenne, 1/2 tsp salt, & 1/4 tsp black pepper together in a small bowl.
  • Step #5 Cut chicken into 1-inch pieces.
  • Step #6 Spray chicken with cooking spray & toss them in spice mixture.
  • Step #7 Divide in half & thread on 2 kabob skewers.
  • Step #8 Place olive oil in small bowl & season this with salt & pepper.
  • Step #9 Cut zucchini & squash into 2-inch pieces & toss in oil to coat.
  • Step #10 Divide in half & place on 2 skewers.
  • Step #11 Remove tray from oven & place skewers on the foil wrap.
  • Step #12 Return to the oven & broil for 5 mins.
