Roasted Carrot And Brie Soup Recipe

Ingredients
  • 1/2 c onions, coarsely sliced .
  • 3 c carrots, coarsely sliced .
  • 6 c chicken stock .
  • 3/4 c cream .
  • salt & black pepper .
  • 2 tbsps butter .
  • 3 oz brie cheese (rind removed)

Directions
  • Step #1 Heat oven to 450F & melt the butter in 9 inch square baking pan.
  • Step #2 Add carrots & roast for 20 mins or until lightly browned, stirring every once in awhile.
  • Step #3 Transfer carrots & butter to a large heavy saucepan.
  • Step #4 Add onions & cook this until translucent (about 3-5 mins).
  • Step #5 Add the chicken stock & season this with salt & pepper.
  • Step #6 Simmer for 30 mins or until carrots are soft.
  • Step #7 Pour about 1/3 of the soup in to a mixer.
  • Step #8 Cut the cheese into small pieces & add to the soup in mixer; mix until smooth.
  • Step #9 Pour into a clean saucepan, mix remaining soup & add to saucepan.
  • Step #10 Add the cream & correct seasonings if necessary.
