Buttermilk Dipping Sauce - Emeril Lagasse Recipe

Ingredients
  • 1/4 tsp cayenne pepper .
  • 1/2 tsp minced garlic .
  • 1/4 tsp salt .
  • 3/4 c buttermilk .
  • 2 tsps sliced fresh dill .
  • 1/4 c mayonnaise .
  • 1/2 cucumber, peeled, seeds removed & coarsely grated .
  • 3/4 tsp salt, plus

Directions
  • Step #1 Place the cucumbers in a small bowl & sprinkle with 3/4 tsp of the salt.
  • Step #2 Stir to mix, then set aside while you assemble the remaining ingredients.
  • Step #3 In a small bowl mix the buttermilk, mayonnaise, dill, garlic, cayenne & salt & stir this to mix well.
  • Step #4 Drain the cucumber in a small colander, using your hands, then, squeeze to remove as much excess water as possible.
  • Step #5 Add the cucumber to the buttermilk mixture & stir this to thoroughly mix.
  • Step #6 Serve as soon as possible or put in the fridge, covered, for up to 1 day in advance.
