Ham 'n Egg Crepes Recipe

Ingredients
  • 12 crepes, prepared .
  • 1 tbsp chives, sliced .
  • 1 c ham, finely sliced .
  • 1/4 tsp dry mustard .
  • 1 c sour cream .
  • 1 (13 1/2 oz) can crushed pineapple .
  • 1 (10 1/2 oz) can cream of chicken soup .
  • 6 eggs, hard boiled, sliced .
  • 1/4 c parmesan cheese, grated

Directions
  • Step #1 Drain pineapple, reserve 1/4 C syrup.
  • Step #2 Combine 1/2 can soup with the drained pineapple, eggs, chives, ham, sour cream, & mustard.
  • Step #3 Set aside.
  • Step #4 mix remaining 1/2 can soup with 1/4 C reserved pineapple juice.
  • Step #5 Set aside.
  • Step #6 Place about 1/3 C ham & egg filling on each crepe & roll up.
  • Step #7 Place filled crepes in a 13 x 9" baking dish.
  • Step #8 Pour sauce over the top, sprinkle with Parmesan cheese.
  • Step #9 Bake in a pre-heated 350 oven 30 mins or until hot & bubbly.
