1 1/2 c yellow split peas or yellow lentils or brown lentils .
3/4 tsp turmeric .
For TADKA of Cumin-Garlic .
2-3 dried small red peppers .
1/3 c sliced fresh coriander .
fresh ground black pepper .
5-6 large garlic cloves, peeled & thickly sliced .
5 tbsps light vegetable oil or ghee
Directions
Step #1 Pick over, clean, & rinse the split peas.
Step #2 Place them in a deep pot, add the water, turmeric, & salt, & bring to a boil.
Step #3 Boil the peas carefully, about 45 mins, until they are very soft, partially covered, checking & stirring every once in awhile to ensure they do not stick to bottom of the pan.
Step #4 Turn off the heat & beat the split peas with a wire whisk or wooden spoon for a min or until they look thick & creamy.
Step #5 You should have 5 c of puree; if not, add extra water.
Step #6 Return the puree to the pot, add black pepper, & heat until boiling.
Step #7 Turn off the heat & fold in the sliced coriander; keep the dal covered.
Step #8 Heat the oil in a frying pan over med-heat/flame.
Step #9 When the oil is hot, add the cumin seeds.
Step #10 When the seeds turn several shades darker, add the garlic & optional red peppers.
Step #11 Cook until the garlic is browned & the oil is infused with its flavor.
Step #12 Pour the oil-garlic mixture onto the dal.
Step #13 Mix well.
Step #14 Taste for pepper & salt.
Step #15 Serve spooned into small bowls.
