Chocolate Chip Cookie Ice Cream Cake Recipe

Ingredients
  • 2 quarts vanilla ice cream .
  • 1/4 c margarine, melted .
  • 1 (18 oz) package small chocolate chip cookies .
  • 1 c hot fudge topping .
  • 1 c whipped cream .
  • 12 cherries (optional)

Directions
  • Step #1 Crush half the cookies (about 20) to make crumbs.
  • Step #2 Combine crumbs with melted margarine & press into the bottom of a 9-inch springform pan or pie plate.
  • Step #3 Stand remaining cookies around edge of pan.
  • Step #4 Spread 3/4 c fudge topping over crust.
  • Step #5 Freeze 15 mins.
  • Step #6 Meanwhile, soften 1 quart of ice cream in microwave or on counter top.
  • Step #7 After crust has chilled, spread softened ice cream over fudge layer.
  • Step #8 Freeze 30 mins.
  • Step #9 Scoop remaining quart of ice cream into balls & arrange over spread ice cream layer.
  • Step #10 Freeze until firm, 4 hrs or overnight.
  • Step #11 To serve, garnish with remainder of fudge topping, whipped cream & cherries.
  • Step #12 **I put cooking time of 30 mins--which is actually the freeze time on the first layer of ice cream.
  • Step #13 ***Cook time does not include the extra 4 hrs of freeze time or freezing overnight.
