Pumpkin Pancakes With Pumpkin Maple Syrup Recipe

Ingredients
  • 1 1/4 c canned pumpkin .
  • 1 1/2 c milk .
  • 2 tbsps apple butter .
  • 1/2 tsp salt .
  • 1 c maple syrup .
  • 2 tbsps sugar .
  • 2 c all-purpose flour .
  • 1 large egg, lightly beaten .
  • 1/4 tsp cinnamon .
  • 1/4 c water .
  • Pumpkin maple syrup .
  • 1 tbsp baking powder .
  • 2 tbsps canola oil .
  • 1/2 c canned pumpkin (not pie mix) .
  • 1 1/4 tsps pumpkin pie spice

Directions
  • Step #1 In a medium bowl mix flour, sugar, baking powder, pumpkin pie spice & salt & mix until mixed.
  • Step #2 In another bowl mix milk, pumpkin, apple butter, water, egg & oil & mix well.
  • Step #3 Grease & heat griddle over low-medium heat.
  • Step #4 Pour pumpkin mixture into flour mixture & mix until moistened but still lumpy.
  • Step #5 Let batter sit 3-5 mins.
  • Step #6 Pour 1/4 c of batter (for each pancake) onto griddle.
  • Step #7 Cook until bubbles form & edges begin to look dry.
  • Step #8 Flip pancakes & cook this until both sides are brown (they will brown more than regular pancakes due to the pumpkin & apple butter).
  • Step #9 Repeat with remaining batter.
  • Step #10 For Pumpkin Maple Syrup:.
  • Step #11 Combine all ingredients in a small saucepan until warm & serve as soon as possible with pancakes.
