Passover Beef/potato/egg Casserole-sefardic Recipe

Ingredients
  • 1 1/2 lbs ground beef or turkey .
  • 6 eggs, hard-boiled, then peeled & sliced .
  • 1/4 tsp black pepper .
  • 2 tsps salt, divided (or salt to taste) .
  • 2 tbsps canola oil .
  • 1 tsp sliced garlic .
  • 12 medium potatoes .
  • 1/2 tsp saffron or turmeric (If ashkenazi & you can't get KFP saffron or turmeric, consider adding extra garlic or onion powder)

Directions
  • Step #1 Boil potatoes with skins until almost fully cooked; set aside.
  • Step #2 Meanwhile, saute meat in pan & add 1 tsp salt & garlic.
  • Step #3 Peel potatoes & mash in bowl, salt, adding saffron, pepper & oil.
  • Step #4 In greased 9-inch-by-11-inch pan with sides, cover with ground meat, add slices of eggs, pat down a layer of mashed potato, create layers approximately 1/4 inch thick: first, create another layer of mashed potato.
  • Step #5 on top & repeat from the beginning, creating 2 to 3 layers of each.
  • Step #6 The top layer should be potato.
  • Step #7 Put pan into oven & bake this at 375 degrees for 30 mins.
  • Step #8 Then broil for 5 mins to make the top potato layer crisp.
