Red Onion & Feta Frittat Recipe

Ingredients
  • 1 large red onion, sliced fairly thin .
  • 6 large eggs, beaten with salt & freshly ground black pepper mixed in .
  • 10-12 cooked potatoes, cut into 1/2 inch chunks. (New potatoes are more flavoursome, but require peeling after being initially cooked) .
  • 2 tbsps vegetable oil .
  • 200 g feta cheese, cut into 1/2 inch pieces

Directions
  • Step #1 1.
  • Step #2 Heat the oil in a 22 - 24cm square frying pan.
  • Step #3 2.
  • Step #4 Add the onions, ensuring that the slices are sperated & fry carefully for 4 -5 mins until beginning to brown.

  • Step #6 Add the potatoes & saute for another 4 - 5 mins to brown slightly.

  • Step #8 Preheat the grill on medium.
  • Step #9 5.
  • Step #10 Pour over the beaten eggs evenly.
  • Step #11 Tilt the pan to ensure that egg runs into & down the edges.
  • Step #12 6.
  • Step #13 Put the pieces of Feta on the top of the egg to evenly spread over the whole surface.
  • Step #14 During cooking, lift the pan every once in awhile to float more egg to the edges.
  • Step #15 Test that the base is browning & setting by carefully priming the edge away from the pan with knife.
  • Step #16 When the base is done, place the whole pan under the grill & cook this until top is golden brown & cooked all over.
  • Step #17 If one part browns quicker than others, cover this part with a piece of kitchen foil wrap until evenly golden.

  • Step #19 Leave in the pan for 5 - 10 mins to set & cool slightly.
  • Step #20 Carefully slide the frittata out of the pan onto a serving dish/plate.
  • Step #21 Eat hot, or cold as a pack lunch/picnic ingredient.
