Ingredients
  • 1 tbsp flour .
  • 2 (3 lb) roasting chickens, skinned & cubed (reserve livers & hearts) .
  • 2 tbsps currants .
  • 4 onions, sliced .
  • 1 tbsp lemon juice .
  • 1 tbsp fresh ginger, sliced .
  • salt & pepper, for seasoning .
  • 2 garlic cloves, sliced .
  • 1 red pepper, sliced .
  • 1/2 tsp turmeric .
  • 2 green peppers, sliced .
  • 1/4 c milk .
  • 2 tbsps Madras curry powder .
  • 3 tbsps oil .
  • 1 pint chicken stock .
  • 1 cucumber, sliced 1-inch thick

Directions
  • Step #1 Heat the oil In a large-ish pan & stir in the the curry powder, add the chicken & brown it.
  • Step #2 Add the onions, garlic, peppers, ginger & turmeric.
  • Step #3 Fry for 2 mins.
  • Step #4 Add the chicken livers & hearts to the pan with the currants, cover with the stock.
  • Step #5 Cook till the meat is tender.
  • Step #6 Add the cucumber & lemon juice, cook till the cucumber is tender.
  • Step #7 In a small pan mix the flour & milk together, to make a paste.
  • Step #8 Strain the cooking liquid from the chicken onto the flour/milk mix & cook till thickened.
  • Step #9 If the mix is too thick, add a little milk.
  • Step #10 Add this to the chicken.
  • Step #11 Stir to mix the chicken & vegetables with the thickened stock & cook on low heat for 5 mins.
  • Step #12 Spice up with the salt & pepper to taste.
  • Step #13 Serve with fried rice.
