Ingredients
1 tbsp flour .
2 (3 lb) roasting chickens, skinned & cubed (reserve livers & hearts) .
2 tbsps currants .
4 onions, sliced .
1 tbsp lemon juice .
1 tbsp fresh ginger, sliced .
salt & pepper, for seasoning .
2 garlic cloves, sliced .
1 red pepper, sliced .
1/2 tsp turmeric .
2 green peppers, sliced .
1/4 c milk .
2 tbsps Madras curry powder .
3 tbsps oil .
1 pint chicken stock .
1 cucumber, sliced 1-inch thick
Directions
Step #1 Heat the oil In a large-ish pan & stir in the the curry powder, add the chicken & brown it.
Step #2 Add the onions, garlic, peppers, ginger & turmeric.
Step #3 Fry for 2 mins.
Step #4 Add the chicken livers & hearts to the pan with the currants, cover with the stock.
Step #5 Cook till the meat is tender.
Step #6 Add the cucumber & lemon juice, cook till the cucumber is tender.
Step #7 In a small pan mix the flour & milk together, to make a paste.
Step #8 Strain the cooking liquid from the chicken onto the flour/milk mix & cook till thickened.
Step #9 If the mix is too thick, add a little milk.
Step #10 Add this to the chicken.
Step #11 Stir to mix the chicken & vegetables with the thickened stock & cook on low heat for 5 mins.
Step #12 Spice up with the salt & pepper to taste.
Step #13 Serve with fried rice.
