Cilantro-butter Salmon And Vegetables In Parchment Recipe

Ingredients
  • 1/4 c leeks, sliced thinly .
  • 1 boneless salmon fillet (approximately 1/2 lb) .
  • 1 carrot, julienned .
  • 1 tbsp ghee or butter .
  • 1 pinch salt .
  • parchment paper (One 15x20 inch piece) .
  • 1 tbsp cilantro chutney (coriander chutney) or pureed fresh cilantro .
  • 1 tbsp lemon juice .
  • fresh ground black pepper

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 One side of the parchment paper, place 1/2 the butter.
  • Step #3 On top of the butter, arrange sliced leeks & julienned carrots.
  • Step #4 Spread chutney or cilantro puree on salmon & place the salmon fillet on top of the vegetables.
  • Step #5 Place the remaining butter on top.
  • Step #6 Sprinkle top with fresh ground pepper & no more than a pinch of salt.
  • Step #7 Fold the other side of the parchment paper over the salmon.
  • Step #8 Roll & crimp edges together to create a tightly-sealed half-moon shaped packet.
  • Step #9 Place packet on baking sheet & bake for 15-25 mins (depending on thickness of fillet).
  • Step #10 Remove from oven & allow to sit for 3-5 mins.
  • Step #11 To serve, place the packet on a dinner plate & create two slashes on the top of the paper in the shape of an X.
