Chicken Curry - North Indian Style Recipe

Ingredients
  • 1 tbsp ground coriander .
  • 1/4 c fresh coriander, roughly sliced .
  • 1 tbsp fresh ginger, peeled & grated .
  • 1 tbsp fresh garlic, crushed .
  • 1 1/2 tsps ground cumin .
  • 1/2 c fresh coriander, roughly sliced .
  • 2 c onions, sliced .
  • 400F g canned tomatoes, sliced .
  • 1 tsp cornflour .
  • 3/4 tsp ground cayenne pepper .
  • 2 tsps salt .
  • 3/4 tsp ground turmeric .
  • 2 tbsps oil .
  • 1 1/2 tsps garam masala .
  • 1 c plain yogurt .
  • 12 large chicken thighs, skinned .
  • 4 tsps green chilies, sliced

Directions
  • Step #1 Stir cornflour into yoghurt.
  • Step #2 Put aside.
  • Step #3 In a large saucepan, heat oil over medium-high heat.
  • Step #4 Add onions & saute until beginning to colour.
  • Step #5 Reduce heat to medium & saute onions until dark golden brown.
  • Step #6 Stir in ginger, garlic & chillies.
  • Step #7 Saute for a further two mins.
  • Step #8 Increase heat to medium-high & add chicken.
  • Step #9 Brown well.
  • Step #10 Reduce heat to medium.
  • Step #11 Sprinkle top ground coriander, cumin, turmeric & cayenne pepper over chicken.
  • Step #12 Mix well & cook for 3 mins.
  • Step #13 Add tomatoes, yogurt mixture, 1/2 c fresh coriander & salt.
  • Step #14 Mix well, cover & bring to boil.
  • Step #15 Reduce heat to low & let simmer until chicken is cooked.
  • Step #16 Turn off heat.
  • Step #17 Stir in garam masala & three tbsps fresh coriander.
  • Step #18 Garnish with remaining coriander & serve this with rice and/or Indian breads.
