Spaghettini With Tuna Recipe

Ingredients
  • 1 1/4 c Chardonnay wine .
  • 20 oz spaghettini .
  • 14 oz tomatoes, peeled & pureed .
  • 1 garlic clove .
  • 3 oz extra virgin olive oil .
  • salt .
  • fresh ground black pepper .
  • 12 oz tuna in olive oil, drained .
  • 1 bunch fresh parsley, washed & finely sliced

Directions
  • Step #1 In a large skillet heat the olive oil, brown the clove of garlic & add the drained tuna & brown.
  • Step #2 Sprinkle top with the Chardonnay wine & evaporate.
  • Step #3 Add the tomato & cook for 15 mins.
  • Step #4 Cook spaghettini In a large-ish pot of salted boiling water.
  • Step #5 Drain the pasta when it is al dente, but retain some of the water.
  • Step #6 Add the pasta with the sauce as soon as possible.
  • Step #7 If pasta looks dry, add some of the cooking water.
  • Step #8 Garnish with sliced parsley & drizzle with extra virgin olive oil.
  • Step #9 Salt & pepper to taste.
