Penne With Tuna, Peppers And Tomato Sauce Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1/4 tsp red pepper flakes .
  • 1 1/2 tbsps balsamic vinegar .
  • 1/4 tsp black pepper .
  • 1 lb dry penne pasta .
  • 1 (7 oz) can tuna in water, drained .
  • 1 (28 oz) can sliced tomatoes .
  • 1/4 c Italian parsley, sliced .
  • salt, to taste .
  • 2 sweet red peppers, roasted, peeled & sliced (may use jarred) .
  • 1 tbsp capers, drained .
  • 3 tbsps black olives, sliced .
  • 3 garlic cloves, minced

Directions
  • Step #1 Heat oil In a large-ish, deep skillet.
  • Step #2 Add garlic & red pepper flakes & cook 1-2 mins, not browning.
  • Step #3 Add sweet peppers, tomatoes & tuna.
  • Step #4 Simmer 10 mins, until sauce thickens.
  • Step #5 Add olives, capers, vinegar & pepper.
  • Step #6 While sauce simmers, cook pasta according to package directions; drain.
  • Step #7 Toss pasta with the sauce & sprinkle with parsley.
  • Step #8 Top with croutons or parmesan cheese if desired.
