Country-style Potato And Tomato Stew With Poached Cod Recipe

Ingredients
  • 1/2 tsp coarse salt .
  • 2 celery ribs, sliced .
  • 1 fennel bulb, cut similarly to the onion .
  • 1 small sweet onion, peeled, cored, & cut into 1-inch pieces .
  • 2/3 lb cod .
  • 8 oz mushrooms, use your favorite .
  • 1-2 tbsp olive oil .
  • 9 oz baby spinach .
  • 2 carrots, sliced .
  • 2 1/2 c chicken broth, fat free, sodium free .
  • 3/4 lb potatoes, peeled & cut into large chunks .
  • 1 dash hot pepper flakes .
  • 1 c canned whole tomatoes .
  • 2 small garlic cloves, minced

Directions
  • Step #1 Heat oil in a 5-quart non-reactive saucepan over medium high heat, carrots, add the onions, celery, mushrooms & fennel & cook this until & softened, about 8-10 mins.
  • Step #2 Add the garlic, potatoes, chicken broth, pepper flakes, tomatoes, & salt, stir until mixd.
  • Step #3 Cover up & reduce heat to low & cook 45 mins or until potatoes are almost mushy but have not lost their shape.
  • Step #4 Add spinach & steam until wilted about 3-5 mins.
  • Step #5 Lay cod over veggie mixture; cover & steam until tender & fish begins to flake, 5 to 7 mins.
  • Step #6 Serve as soon as possible.
