1 small sweet onion, peeled, cored, & cut into 1-inch pieces .
2/3 lb cod .
8 oz mushrooms, use your favorite .
1-2 tbsp olive oil .
9 oz baby spinach .
2 carrots, sliced .
2 1/2 c chicken broth, fat free, sodium free .
3/4 lb potatoes, peeled & cut into large chunks .
1 dash hot pepper flakes .
1 c canned whole tomatoes .
2 small garlic cloves, minced
Directions
Step #1 Heat oil in a 5-quart non-reactive saucepan over medium high heat, carrots, add the onions, celery, mushrooms & fennel & cook this until & softened, about 8-10 mins.
Step #2 Add the garlic, potatoes, chicken broth, pepper flakes, tomatoes, & salt, stir until mixd.
Step #3 Cover up & reduce heat to low & cook 45 mins or until potatoes are almost mushy but have not lost their shape.
Step #4 Add spinach & steam until wilted about 3-5 mins.
Step #5 Lay cod over veggie mixture; cover & steam until tender & fish begins to flake, 5 to 7 mins.
Step #6 Serve as soon as possible.
