Clams Kokkinisto Recipe

Ingredients
  • 2 (7 oz) cans whole baby clams, undrained
  • 1/2 tsp chili pepper flakes
  • 1 (6 oz) can tomato paste
  • 2 tbsps olive oil
  • 1/2 c sliced onion
  • 4 bay leaves
  • 4 cloves garlic, minced
  • 1 (28 oz) can canned peeled & sliced tomatoes
  • salt & pepper to taste
  • 2 tsps dried oregano
  • 2 large stalks celery, sliced
  • 2 tbsps olive oil

Directions
  • Step #1 In a large saucepan, celery, saute the onion, & garlic in 2 tbsps olive oil until tender.
  • Step #2 Stir in tomatoes, tomato paste, & clams.
  • Step #3 Spice up with bay leaves, oregano, chili pepper flakes, & salt & pepper to taste.
  • Step #4 Cover, & let simmer for 1 hr, until tomatoes begin to turn deep red in colour & the sauce thickens.
  • Step #5 Stir in remaining 2 tbsps olive oil near the end of the cooking time.
