Step #1 Preheat oven to 400°; add oil to a preheated skillet over medium to medium-high heat.
Step #2 Saute pepper, celery, water chestnuts, & onion for 2-3 mins.
Step #3 While veggies are still a little crunchy, crab, transfer to a bowl; to the bowl also add bean sprouts, soy sauce, & thyme; mix well with a spoon.
Step #4 Paint half a sheet of phyllo dough with melted butter & fold sheet in half, making almost a square.
Step #5 Pile a few spoonfuls of filling 2 inches from the bottom of the sheet & leaving 2 inches at either side of sheet.
Step #6 Fold bottom flap up & side edges in, then roll up & over until you reach the top of the sheet.
Step #7 Your crab pastry will look like a spring roll; dab the edges & sides of your roll with melted butter & place seam-side down on a pastry sheet.
Step #8 Assemble all & bake on center rack 15 mins or until lightly golden all over.
