Chi-chi's Sweet Corn Cakes Recipe

Ingredients
  • 1/4 c water .
  • 1 (10 oz) package frozen corn, thawed .
  • 2 tbsps whipping cream or sour cream .
  • 1/4 tsp salt .
  • 1/3 c butter or margarine, softened .
  • 1/3 c sugar .
  • 4 tbsps yellow cornmeal .
  • 1/3 c masa harina .
  • 1/4 tsp baking powder

Directions
  • Step #1 With an electric mixer, beat butter or margarine until fluffy.
  • Step #2 Gradually beat in masa harina.
  • Step #3 On lowish speed, beat in water.
  • Step #4 Place corn in the bowl of a food processor/blender & pulse until sliced coarse.
  • Step #5 Stir in masa mixture.
  • Step #6 In a small bowl, baking powder, cream, stir this together sugar, cornmeal, & salt.
  • Step #7 Stir into corn mixture.
  • Step #8 Spread in a greased, 8-inch-square baking pan.
  • Step #9 Cover up with foil wrap.
  • Step #10 Place In a large-ishr pan & pour boiling water half way up the side of the smaller pan.
  • Step #11 Bake at 350 degrees for 50 mins or until set.
  • Step #12 Remove smaller pan from water, uncover, & let this stand 15 mins.
  • Step #13 Makes 8 servings.
