Chile Cheese Cornbread In A Jiffy Recipe

Ingredients
  • 2 large eggs .
  • 1 (4 oz) can sliced mild green chilies (you can substitute sliced jalepenos for an extra kick) .
  • 2 (8 1/2 oz) boxes Jiffy corn muffin mix .
  • 1 c cheddar cheese, shredded .
  • 2/3 c milk .
  • 1/2 c sour cream

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Grease a 9x9 square baking dish.
  • Step #3 (I use stoneware).
  • Step #4 Combine all ingredients together In a large-ish mixing bowl.
  • Step #5 Mix well.
  • Step #6 Pour into prepared baking dish.
  • Step #7 You can top this with a little extra cheese, if desired.
  • Step #8 Bake 25 mins at 400F degrees or until golden brown.
  • Step #9 Serve warm with butter.
  • Step #10 This can also be made in muffin tins.
  • Step #11 Variation: Add crumbled crisp bacon & 1/2 c sour cream.
