- 1 (4 oz) can sliced mild green chilies (you can substitute sliced jalepenos for an extra kick) .
- 2 (8 1/2 oz) boxes Jiffy corn muffin mix .
- 1 c cheddar cheese, shredded .
- 2/3 c milk .
- 1/2 c sour cream
Directions
- Step #1 Preheat oven to 400F degrees.
- Step #2 Grease a 9x9 square baking dish.
- Step #3 (I use stoneware).
- Step #4 Combine all ingredients together In a large-ish mixing bowl.
- Step #5 Mix well.
- Step #6 Pour into prepared baking dish.
- Step #7 You can top this with a little extra cheese, if desired.
- Step #8 Bake 25 mins at 400F degrees or until golden brown.
- Step #9 Serve warm with butter.
- Step #10 This can also be made in muffin tins.
- Step #11 Variation: Add crumbled crisp bacon & 1/2 c sour cream.
