Spicey Ricey Valentine Pudding Recipe

Ingredients
  • 1 c cooked rice .
  • 1 (14 oz) jar spiced apple rings .
  • 2 tsps sugar .
  • 1 tsp vanilla .
  • 1/2 c milk .
  • 4 eggs .
  • 1 1/2 tsps cornstarch

Directions
  • Step #1 Drain apple juice into a liquid measure & set aside.
  • Step #2 Chop 3 of the slices into a small bowl.
  • Step #3 Stir in rice.
  • Step #4 Spoon about 1/3 c of the mixture into each of 4 greased 6-oz custard c.
  • Step #5 Place c in large baking pan.
  • Step #6 Thoroughly mix eggs, milk, sugar & vanilla.
  • Step #7 Pour over rice in each c.
  • Step #8 Place pan on rack in preheated 350 degree oven.
  • Step #9 Pour very hot water into pan to within 1/2 inch of top of custard.
  • Step #10 Bake until knife inserted near center comes out clean, 25 to 30 mins.
  • Step #11 Remove promptly from hot water.
  • Step #12 Cool slightly on wire rack.
  • Step #13 Slowly mix 1 1/2 c reserved apple juice into cornstarch.
  • Step #14 Cook over med-heat/flame, stirring constantly, until mixture boils.
  • Step #15 Unmold custards onto serving dishes.
  • Step #16 Top with apple syrup.
  • Step #17 Just a thought, the leftover apple rings could be served under the custard or off set under it.
