Mireille Guiliano's Cauliflower Gratin Recipe

Ingredients
  • 1 egg .
  • salt & pepper .
  • 1/2 c grated cheese (Gruyere, Swiss, Jarlsberg, Comte, Parmesan, Pecorino, or a mix of 2) .
  • 1/2 tsp salt .
  • 2 c milk .
  • 1 medium head cauliflower .
  • 1 tbsp butter

Directions
  • Step #1 Trim the cauliflower, separate the flowerets, & cook in the milk & the 1/2 tsp of salt until tender (10-15 mins).
  • Step #2 Drain, reserving 1/3 c of the milk.
  • Step #3 Arrange cauliflower in a lightly buttered baking dish.
  • Step #4 Whisk the egg & reserved milk, then mix in the cheese; spread over the flowerets.
  • Step #5 Spice up to taste & dot with butter.
  • Step #6 Broil until browned & bubbly & serve hot.
